
Dhaba Style Chicken

One of the heartiest recipes ever made. It brings back memories of eating at a truck stop back in India.
Ingredients
- 1/3 cup mustard oil
- 2 - 3 green cardamom
- 4 - 5 black peppercorns
- 2 - 3 cloves
- 2 cups onions sliced
- 1 medium tomatoes chopped
- 2 large tomatoes pureed
- 2 tablespoons ginger garlic paste
- 1 tablespoon ghee
- 1 heaped tablespoon red chilli powder
- 1 heaped tablespoon coriander powder
- 1/2 teaspoon turmeric powder
- 1.5 teaspoon salt or to taste

- 3 - 4 cups hot water
- 3 green serrano chilies chopped
- 1/2 inch ginger (peeled and julienned)
- 1/2 cup cilantro chopped
- 1 teaspoon black pepper powder
- 1/2 teaspoon garam masala
- 2 pounds chicken (thigh and drumstick)
- 1 teaspoon salt
- 1 heaped tablespoon ginger garlic paste
- 1 tablespoon red chilli powder
- 2 teaspoon mustard oil
Instructions
In a bowl, add chicken pieces (cut a few slits), salt, ginger garlic paste, red chilli powder, mustard oil and marinate well for at least 15 minutes. Keep this aside.
In a pot, add mustard oil. Once it's smoky hot, add green cardamom, black peppercorns, cloves and splutter well.
Add onions and cook for 5 - 6 minutes or until it's light golden in color.
Add cut tomatoes, tomato puree and cook for 10 minutes.
Add ginger garlic paste, ghee and cook for another 4 - 5 minutes.
Add red chilli powder, coriander powder, turmeric powder, salt and cook for a minute.
Add marinated chicken and mix well. Add hot water, give it a good mix, cover it with a lid and let it simmer for 15 minutes or until chicken gets tender.
Finish it with green chilies, ginger, cilantro, black pepper powder, garam masala and give it a quick boil.
Serve hot with roti or steamed rice.
