Bhuna Gosht

Goat meat slowly roasted with Indian spices, so flavorful that you don't taste the gaminess of the meat. The Bhuna masala can also be used to make other dishes.

Instructions

  1. Roast the spices for the Bhuna masala in a pan on low heat for 3 minutes. Remove to a plate, allow it to cool and then grind it to a fine powder.

  2. Heat 6 tablespoons of cooking oil in a pressure cooker / heavy bottomed pan.

  3. Add the sliced onions and fry on medium heat for 10 minutes till golden brown.

  4. Add the goat meat pieces, mix and sear it on medium heat for 5 minutes by adding splashes of water.

  5. Add ginger garlic paste, mix and fry for 2 minutes on low heat.

  6. Add the turmeric powder and kashmiri chilli powder, mix and sear for 5 minutes on medium heat by adding splashes of water. Sear till the meat is browned and oil separates.

  7. Add 200 ml of water and pressure cook for 4 whistles (20 minutes in Instant Pot) till the meat is tender. Alternatively, continue to cook for 45 minutes by covering the pan till the meat is tender.

  8. Once the pressure is released, open the lid and transfer to a pan. Mix 6 tablespoons of yogurt, add the green chilies and continue to cook on low heat for 2 - 3 minutes till the yogurt is cooked. Continue to cook on medium heat to dry any excess water that is there.

  9. Garnish with chopped cilantro and continue to cook for another 2 - 3 minutes.

  10. Serve with naan or rice.
